Green Peach Smoothie Bowl

Hello green peach smoothie bowl, aka what dreams are make of.

I wanted my first “official” post to be food because that’s where my blogging journey began. I started as a food photographer & blogger, and so when I decided to transition into lifestyle blogging I knew that food would remain extremely important to me.

I pretty much yell this from the rooftops (especially when I eat at an establishment that doesn’t offer good allergy friendly foods), but in case you don’t know, I have a dairy allergy.

So all the recipes you’ll see on this here blog will be dairy-free! Yippee!

I love how simple and easy a good smoothie bowl is. Basically you stick all the ingredients into the blender, turn it on, pour it all into a bowl, add some toppings, and voila… perfectly filling breakfast.

On top of all that, they are also totally Instagram worthy and filled with healthy, densely-packed nutrients. Did I mention smoothie bowls are yummy too?

This smoothie bowl is killer because it makes enough to feed a small tribe (or a hungry vegan). When I was taking photos for this post, I accidentally put too many toppings in and caused a huge overflow.

Talk about a scene.

Thankfully I’ve perfected my fruit layering/liquid pouring tactics since then and am good.to.go.

From that experience, I’ve decided that loading fruit on top of a smoothie is basically an art form. Peeps, make sure to watch your liquid intake on this recipe, or else you’ll have a not so fun time trying to gingerly place fruits and granola and chia seeds on top of your bowl in your early morning groggy state.

So listen…

In celebration of JUNE happening, head on over to your local farmer’s market and load up on those sweet ripe peaches, and get to blending!

GREEN PEACH SMOOTHIE BOWL
Author: Always, Hunter
Serves: 1-2
Ingredients
  • 1 cup spinach
  • 2 peaches
  • 1 banana
  • ½ cup coconut fat
  • ½ cup vanilla soy yogurt (6 oz.)
  • 1 teaspoon honey or agave nectar
  • 3/4 cup coconut water
  • 1 cup ice
  • Toppings:
  • 3 strawberries
  • 1 kiwi
  • 1 honey mango
  • ½ cup granola
  • ½ cup blueberries
  • ½ banana
  • ¼ cup granola
  • 1 tablespoon chia seeds
  • 1 tablespoon coconut flakes
  • ¼ cup pineapple
Instructions
  1. Blend all the smoothie ingredients together until smooth. Pour into a large bowl (or two medium sized bowls) and then add the toppings. Enjoy.
Notes
Make sure to put the lighter foods on first, and then the heavier ones leaning into the lighter ones to stabilize them. Also, add the liquid slowly, you probably won’t need it all. You want a thick but well blended consistency so the toppings will stay on top.
