Snackin’ on the Go

Elimination Diet 3

This Monday I started the elimination diet (you can read more about why here). I’m going to be out of town for the next few days because Jordin is having surgery, so we’re staying in a hotel for a few nights and spending our days at the hospital. I’m the kind of person that gets real hangry (hungry + angry) real quick, so I decided to pack some of my own foods that fit inside my diet plan that I could snack on and avoid the major cravings and bad decision making that comes with being hangry. I know of a few friends that are also doing their own versions of diets and cleanses over this month, so I thought it would be fun to share the list of snacks that I brought on our trip and some of the recipes I used.

Two Morning Glorious Green Juices | I couldn’t get on the juicing bandwagon… until I found Kris Carr’s Crazy Sexy Juice cookbook. You cannot go wrong with any recipe. I have tried probably close to twenty of the different juices and smoothies she offers in her book and have absolutely loved every single one. If you have trouble getting in your greens or want to bring a family member over to the light side, just make one of these and you (or them!) will be sold.

Rice Cakes | I’ve really been missing bread since starting this diet, and the crunch of a fresh rice cake is the perfect snack to satiate my gluten loving stomach. My two favorite toppings are either avocado with tomato slices and sea salt or almond butter with banana.

Banana Bread Energy Bites | I’m not a huge energy bite fan, but I love anything with banana and chia seeds, so I was sold on trying this recipe. I love how the dates give it such sweet flavor and hopefully these bites will keep me energized after my 4am wakeup call tomorrow!

Sweet Potato Brownies | These brownies are what made Deliciously Ella famous. After trying to make them about a year ago with a friend, and having them turn out terribly with this burnt taste, I decided to give them another go. I read through all the comments on the post and discovered that the American cocoa powder (Nestle) I was using could be the culprit. So I used organic raw cacao powder this time and they turned out perfectly! Just the right amount of sweet without leaving you feeling bloated or tired. They are delicious!

Homemade Dehydrated Apples | I have a family friend’s mom who makes the best dehydrated apple slices ever (I didn’t even know it was possible to make them taste so good). She shipped us some in December and after my mom secretly hoarded them for a few weeks, she finally shared a bag with me to bring on this trip. I am doing my best to ration them and not devour the whole bag as we speak because they are that good! And all there is to it is fresh apples, dehydrated. Sometimes it’s the simple things in life that reap the most rewards.

What are your favorite health conscious snacks? Any that I must try?

Everything looks awesome! I went to the GA football game this past weekend. I had a cooler full of foods because when this girl gets hangry… She gets HANGRY! 😂 On the way back from the game we stopped at Trader Joes! My first time ever visiting this grocery store. Have you ever been? I love everything about it! I am going to have to make special trips to Tallahase now. Haha! Anyways I am getting off topic but I loved reading this post!
