Happy St. Patricks Day!

Are you wearing green today? Every year I remember getting pinched by my best friend, Sydney, because every year I consistently forget to wear green. This year, I have a brand new green t-shirt that I was ready to throw on, thinking Syd would be so proud. Then I realized, Beauty and the Beast comes out today so I MUST wear yellow instead. And yellow and green definitely don’t go together in the wardrobe department. So, cheers, to another year of me getting pinched.

I am so excited to be sharing this recipe with you guys today. I’ve been working with Vita Coco for the last few years and it’s been such a dream come true. I’ve loved making recipes for them and helping develop their content on social media. So, when their new coconut milk was released and they were looking for a St. Patrick’s Day inspired {boozy} recipe, I couldn’t wait! This shake/float concoction is seriously delish. I practically inhaled it while taking the photos. The simple syrup makes it extra sweet, while the peppermint schnapps adds a little kick. This is definitely the perfect sweet drink to add a some fun to your holiday! I hope you love it as much as I do! Xx

Spiked Shamrock Shakes

Serves: 2
Ingredients
  • For the mint simple syrup:
  • -1/4 cup water
  • -1/4 cup coconut sugar
  • -1/2 cup fresh mint
  • For the shamrock shake:
  • -The simple syrup
  • -2 cups coconut ice cream + more for serving
  • -1/2 – 1 cup Vita Coco coconut milk (depending on how thick you like it)
  • -Small handful of spinach (or green food coloring)
  • -3 oz peppermint schnapps
  • -Fresh mint if needed
Instructions
For the simple syrup
  1. Place the mint, water, and coconut sugar into a small pot and bring to a boil.
  2. Cover and turn off heat. Let steep for 30 minutes.
  3. Strain the liquid and remove the mint stalks. Set aside.
For the shakes
  1. Add all the ingredients to a blender.
  2. Blend on medium-high until smooth.
  3. Scoop ice cream into the glasses until full. Pour the shake over it. Top with whipped cream, lucky charms, sprinkles, fresh mint, etc. Serve chilled.
