I have an obsession.
It involves Disney World.
And pineapple.
If you’ve never been to the Aloha pineapple stand at Magic Kingdom and tried the orange pineapple float, then you haven’t lived. And so this cocktail float is inspired by the best fruity float eva! Mixing coconut water and pineapple at a high speed makes this amazingly frothy mixture that tastes creamy while still having that signature pineapple tartness to it. Pour it over coconut ice cream for a dreamy drink to soak in those last rays of the summer months. Add some ice to the mixture for more of a pineapple slushy, or some mint if you want to go mojito style.
I love using this recipe as the base, and then mixing and matching different flavors to make my own original style drink. This would also be perfect for a “drink bar” filled with all different toppings and rum flavors, or great just as it is. You can also go non-alcoholic simply by removing the rum. Oh I know, so versatile.
I’m going to sip this and dream of lounging by the pool with a donut float and a cute floppy hat. Call me when it’s lunchtime.
- 1 cup pineapple, cubed
- 1 cup coconut water
- 1 shot coconut rum
- 1 pint coconut ice cream
- In a blender, mix together the pineapple, coconut water, and coconut rum until fully blended.
- Scoop coconut ice cream into two glasses, and pour the pineapple mixture on top. Serve cold and garnish with extra pineapple or mint.
Pineapple and Coconut are my two favourites! This is perfect!
